Pistachios may be new to California, but caliphs and kings have appreciated them since ancient times. Thriving in the high desert of the Middle East, pistachios and almonds are the only two varieties of nuts mentioned in the Bible. Pistachios were also the favorites of the Queen of Sheba, who demanded exclusive rights to her kingdom's entire harvest. Today, California is the second largest producer of pistachios in the world, after Iran, with 525 producers cultivating 100,000 acres, according to Karen Reinecke, president of the California Pistachio Commission.
